About The Coffee

This has been a long wait to be able to introduce our new Koji processed coffee to the UK and we are very excited to release it finally at the end of this year. It is a rich and complex coffee with notes of Prune, Blueberry, Blood Orange, Bourbon Whiskey, Dried Pineapple, Maple Syrup and Liquorice Candy. The Koji process enhanced all those aromatic compounds and elevated its quality.

This bean was produced by Shady and Elias Bayter, second-generation coffee farmers who run Finca El Vergel. They do not shy away from experimentation, using innovation and technology to improve their farming processes, and therefore their coffee quality and livelihoods.

(1200-1900 MASL) Tolima, an enchanting region nestled between the Andean mountains, is rapidly gaining recognition for its exceptional coffee. Tolima is home to a number of various coffee varietals, including some native to Colombia. The diversity of coffee varieties allows farmers to experiment with different flavour profiles and adapt to changing conditions.
Furthermore, the area's diverse microclimates and elevations give rise to beans with a smooth, full body, medium acidity, and a sweet, caramel-like finish. Tolima also has a long history of coffee cultivation, and local farmers often have generations of experience in growing coffee. This tradition, combined with a commitment to environmentally friendly and socially responsible practices further distinguishes its coffee production and popular destination for coffee roasters.
