The initial aroma of this limited edition coffee from Finca Guacanas hits you like you’ve just peeled a fresh mandarin. The overall cup experience is also crisp and clean throughout and we’re impressed by the interesting harmony created through the tropical characteristics of the Pink Bourbon varietal and the effects of the mandarin washing process. It reminded us a lot of the Gimlet cocktail.
Produced by Andres Guaca, this coffee represents a true commitment to coffee growing experimentation. As well as focusing on production in small bespoke lots where attention to details can be increased and handpicking can follow a strict regime where only cherries of optimal ripeness reach are processed, this coffee explores what’s possible with the extremely rare and exotic Pink bourbon varietal from Huila.
This particular variety is currently under research in order to determine its origin and it is said that it is a mutation that took place at 2,100 m.a.s.l in San Adolfo Huila.
