El Vergel offers a great balance between acidity, aftertaste and body with a medium and smooth mouthfeel. Combined with the coffee’s noticeable sweetnesses, this makes it fantastic when brewed using pour over methods. However, we really love how sweet spices like Anise and notes of roasted almond, chocolate, orange and caramel still shine through when this coffee is mixed with milk, showcasing the true versatility of Colombian coffee. We recommend this one for morning espressos!
El Vergel is located along the mountain slopes of Nevado del Ruiz, an inactive volcano in the department of Tolima, which has provided the farm with exceptional nutrient-rich soil perfect for coffee production. Their operation covers almost 300 hectares and is divided into smaller plots at different altitudes where multiple varieties are grown including Caturra, Bourbon, Java and Geisha.
El Vergel is one of the oldest single estates in the region but today, through the work of siblings Elias and Shady Bayter together with their mother Martha, is known for its experimental coffees where both traditional production methods and technology are leveraged to improve quality and achieve some amazing results — evidenced through this fantastic Yellow Bourbon coffee.
